Lavender Mimosa: A perfect summertime sipper made with aromatic lavender, sweet lemonade and brut champagne.

If you have been hanging around on Fresh Coast Eats for a while now, you know I LOVE my mimosa's! I like them because they feel fancy and special with minimal effort. Most of the time I enjoy the traditional orange and champagne version, but every once in a while I like to change it up with one of my seasonal recipes!

My favorite recipe for spring and summer is this lovely lavender mimosa. It's very similar to a simple lemonade mimosa, but with a drop of lavender essential oil for a beautiful floral bouquet. This recipe tastes and looks so elegant, you would think it had many complicated steps that took all day. But it is super simple and I can't wait to show you how to make it.

Ingredients

To make this simple lavender lemonade cocktail, you are going to need just a few ingredients.

  • Champagne
  • Lemonade
  • Lavender Essential Oil (Food Grade)

What is food grade lavender essential oil?

Food grade essential oil simply means it is approved by a regulation of the FDA for human consumption.

Where can I find it?

Culinary food grade lavender essential oil is easily found at health food stores. My favorite place to purchase all my culinary lavender products is Lavender Hill Farm in Niles, Michigan. You can order it online!

Can I make this if I don't have lavender essential oil?

Yes. If you don't have lavender oil, you can use fresh lavender. Lightly crushing the buds and placing them in the lemonade will lightly flavor it. The taste of the lavender will be a little more subtle, but a little hint is all you need. Another way to add lavender flavor is by using a lavender simple syrup. You can make your own at home, buy it in the liquor section of your store, or order off amazon.

Best Champagne for Mimosa's

When it comes to selecting champagne for mimosa's, dry is always better! You could try using a dry Prosecco, dry Cava or traditional brut champagne.

How to make it

Start by adding one or two drops of essential oil into a pitcher of lemonade. Taste the lemonade and continue to add drops of essential oil, one by one, until the desired level of floral flavor is achieved. With lavender essential oil, a little goes a long way. Tip: don't add the oil directly into your glass...trust me on this one.

Next, fill your champagne flute with as much champagne as you would like. Then fill the remainder of the glass with the lavender infused lemonade. To make this drink extra special, you can garnish it with a sprig of dried lavender, lemons or mint leaves.

Storage

This lavender lemonade cocktail is best enjoyed right after they are served. If for whatever reason you can't finish it, place it in the fridge and it will have mild bubbles for a few hours.

Make it for a crowd

This recipe would be so beautiful in a large pitcher to serve for a crowd! To make a big batch of it, simply prepare the lemonade first and add the desired amount of lavender oil. Then fill the pitcher about ⅔ full of champagne and ⅓ full of the lemonade. For a pretty presentation, throw a few sprigs of fresh lavender, fresh lemons and mint inside the pitcher.

Ingredients

  • 3 cups lemonade chilled
  • 1-3 drops lavender essential oil food grade
  • 1 375 ml bottle dry sparkling wine chilled

Instructions

  • Prepare the lemonade by adding 1-3 drops of lavender essential oil until desired amount of floral flavor is achieved. Mix thoroughly.
  • Fill each champagne flute with ⅔ dry sparkling wine.
  • Fill the remainder of the glass with the lavender lemonade.
  • Serve immediately, and garnish with lavender if desired.
