Preheat your oven to 425 degrees and prepare a baking sheet by lining with parchment or aluminum foil.
In a large bowl, toss the parsnips with the olive oil, thyme, salt, pepper and 2 Tablespoons of the honey.
Roast in the preheated oven for about 25 minutes or until fork tender and golden brown.
Remove from the oven and drizzle on remaining honey before serving.
Notes
If the parsnips are large in size, it may be necessary to parboil them for about 5 minutes before starting with the recipe. This ensures they will be cooked through
