  • Griddle, electric skillet, frying pan


  • 1 cup flour
  • 2 Tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • ½ cup melted butter
  • ½ teaspoon vanilla


  • In a large bowl, combine the flour, sugar, baking powder and salt. Stir with a whisk to break up any clumps.
  • Add the milk, butter and vanilla. Using an electric mixer on low, blend until smooth.
  • Pour the batter into a condiment bottle, pastry bag or ziplock bag with the corner cut off.
  • Preheat a pan, electric skillet or griddle to medium heat, about 300 degrees and coat with a light, even layer of cooking spray.
  • Carefully squeeze little circles of batter onto the greased pan, skillet or griddle, being sure to leave space in between each circle.
  • Cook for about 2-3 minutes or until the batter bubbles to not fill in when they pop. Then, use a spatula to toss around until golden brown and crispy.
  • Serve with butter and maple syrup or a splash of milk.
