Ingredients

  • 2 Tablespoons extra virgin olive oil
  • 2 carrots chopped, about 1 cup
  • 2 stalks celery chopped, about 1 cup
  • 1 large onion chopped, about 2 cups
  • 3 cloves garlic minced
  • 8 cups chicken stock low sodium
  • 1 cup shredded chicken cooked
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup pastina or very small pasta
  • 1 Tablespoon lemon juice

Optional Toppings

  • parmesan cheese
  • parsley

Instructions

  • In a large stockpot, heat the oil over medium heat and sauté the carrots, onion and celery until tender.
  • Add the garlic and cook for 1 additional minute, until fragrant
  • Carefully add the chicken, chicken stock, salt, and pepper. Bring mixture to a simmer for about ten minutes.
  • Add the pasta and cook for 15 minutes.
  • Serve with optional garnishes - such as parmesan cheese or fresh parsley.

Notes

Depending on what kind of pasta you choose, you may need to adjust the amount of stock.
