Use a slice of lime and run along the rim of each champagne flute.
Dip the rim of the champagne flute in the granulated sugar.
Fill 8 champagne flutes halfway full of pomegranate juice.
Fill the rest of the glasses with sparkling wine, adding more or less if desired.
Garnish each glass with 1 Tablespoon pomegranate seeds and a sprig of rosemary.
Expert Tips for Pomegranate Mimosas:
Use 100% pomegranate juice if possible. It will have a more authentic flavor than drinks or beverages made with pomegranate.
For the sparkling wine, always choose dry or “brut” when making mimosas. You want a less sweet flavored champagne to mx with the sweetness of the pomegranate juice.
If time allows, allow the glasses some time to sit after sugaring the rims before making the cocktails. This helps it to stiffen up a bit more so it sticks better once the bubbly is added.
Champagne, Cava or Prosecco are all excellent choices for sparkling wine when making mimosa.
Serve your pomegranate up in a tall champagne flute for the most elegant and striking presentation.
