Oat Flour Pancakes

Oat flour pancakes are a healthy and delicious way to enjoy oats in the morning for breakfast. This simple pancakes with oat flour are made with only 7 pantry staple ingredients and take only 15 minutes to prepare.

Ingredients

  • 2 cups rolled oats processed into oat flour (or oat flour)
  • 2 teaspoons baking powder
  • 1 Tablespoon brown sugar
  • ¼ teaspoon salt
  • 1 cup milk
  • 2 eggs lightly beaten
  • ½ teaspoon vanilla
  • Cooking spray butter or oil for cooking pancakes

Instructions

  • In a large bowl, combine the oat flour, baking powder, brown sugar and salt. Mix until fully incorporated.
  • Add the milk, eggs and vanilla and stir until completely combined.
  • Preheat a griddle or skillet to medium heat (375 degrees)
  • Use cooking spray, butter or oil to prepare the surface of the cooking unit.
  • Spoon ¼ cup of batter onto the prepared surface.
  • Cook for about 2-3 minutes or until the batter bubbles and the bubbles to not fill back in.
  • Flip the pancake and cook an additional 2 minutes or until desired level of doneness is achieved.
  • Serve with butter and maple syrup.

Notes

Notes for Making Oat Flour Pancakes:
  • Make your own fresh oat flour by using a food processor to grind rolled oats until desired texture is reached.
  • The optimal cooking temperature for pancakes is 375 degrees.
  • Make a double batch to meal prep for the week.
  • To thin out batter, add more milk or to thicken the batter, add more oat flour.
