Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 Tablespoons granulated sugar or sweetener of choice
  • 1 ½ cups oat milk
  • 2 eggs lightly beaten
  • 3 Tablespoons melted dairy free butter or oil of choice

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, salt and granulated sugar until well combined.
  • Add the oat milk, eggs and melted butter and use an electric mixer on medium low speed to blend until smooth.
  • Preheat a non-stick skillet over medium heat and spray with non-stick cooking spray if desired.
  • Pour ½ cup portions of batter into the skillet.
  • When bubbles form in the batter, pop and do not fill, you can flip the pancake and continue cooking for an additional minute.
  • Remove pancakes from skillet and serve.

Notes

Expert Tips:
  • Whisk dry ingredients first, then add the wet for an extra smooth batter without overmixing.
  • 375 degrees F is the ideal pancake cooking temperature.
  • Non-stick spray is the best way to prevent the pancakes from sticking to the pan.
  • Change it up by adding blueberries, chocolate chips, or whatever your favorite pancake toppings are!
