In a large bowl, combine the flour, sugar, baking powder and salt. Stir with a whisk to break up any clumps.
Add the milk, butter and vanilla. Using an electric mixer on low, blend until smooth.
Separate the batter into three bowls and use food coloring to create desired shade.
Pour the batter into a condiment bottle, pastry bag or ziplock bag with the corner cut off.
Preheat a pan, electric skillet or griddle to medium heat, about 300 degrees and coat with a light, even layer of cooking spray.
Carefully squeeze little circles of batter onto the greased pan, skillet or griddle, being sure to leave space in between each circle.
Cook for about 2-3 minutes or until the batter bubbles to not fill in when they pop. Then, use a spatula to toss around until golden brown and crispy.
Top with desired spooky toppings and serve with butter and maple syrup or a splash of milk.
