Cranberry Mojito

This cranberry mojito made with fresh cranberries is the perfect rum cranberry cocktail. Fresh lime is muddled with sugar and lime juice, then topped with a simple homemade cranberry syrup for the ultimate seasonal makeover.

Ingredients

Cranberry Syrup

  • ½ cup fresh or frozen cranberries
  • ½ cup granulated sugar
  • ½ cup water

Cranberry Mojito

  • ¼ cup mojito mint leaves packed (about 20 minut leaves - 10 per glass)
  • 4 teaspoons granulated sugar
  • 2 teaspoons fresh lime juice
  • 4 ounces prepared cranberry syrup
  • Ice
  • 4 ounces white rum
  • 4 ounces club soda
  • Optional: additional fresh cranberries lime and mint sprigs for garnish

Instructions

Make the Cranberry Syrup

  • In a small saucepan, combine the cranberries, sugar and water and cook on medium heat until sugar is dissolved and cranberries begin to burst.
  • Use a spoon to mash the berries lightly to release their flavor and remove from heat. Set aside and cool to room temperature.

Assemble the Cocktails

  • In two tall cocktail glasses, divide the mint leaves evenly. (About 10 per glass)
  • Place two teaspoons of sugar in each glass and use a muddler to smash the mint leaves with the sugar about 5 times.
  • Add 2 teaspoons of lime juice in each glass.
  • Pour 2 ounces of cranberry syrup in each glass, adding a few smashed berries if desired.
  • Add 2 ounces of white rum to each glass.
  • Fill each glass to the top with ice and top with club soda.
  • Garnish with additional fresh or smashed cranberries, fresh lime and mint sprigs.
  • Serve with a straw or stir stick so your guests can stir before enjoying.

Notes

  • Use fresh or frozen cranberries, not dried or canned!
  • Use granular sugar to muddle the mint. It helps release the flavors and prevent bitterness.
  • Muddle the mint leaves in the glass your serving it in.
  • Mojitos are meant to be stirred, not shaken so don't mix your mojito in a shaker glass.
