extra virgin olive oil

chopped, about 1 cup

celery
chopped, about 1 cup

Instructions
In a large stockpot, heat the oil over medium heat and sauté the carrots, onion and celery until tender.
Add the garlic and cook for 1 additional minute, until fragrant
Carefully add the chicken, chicken stock, salt, and pepper. Bring mixture to a simmer for about ten minutes.
Add the pasta and cook for 15 minutes.
Serve with optional garnishes - such as parmesan cheese or fresh parsley.
Notes
Depending on what kind of pasta you choose, you may need to adjust the amount of stock.
