Ingredients

  • 2 cups fresh tomatoes diced
  • 1 cup red onion chopped
  • 1 cup prepared pesto
  • ½ cup fresh cilantro chopped
  • ¼ cup jalapeno pepper minced
  • 1 Tablespoon lime zest
  • 1 Tablespoon lime juice
  • 1 clove fresh garlic
  • Salt and pepper to taste

Instructions

  • In a large bowl, toss together all ingredients until well combined.
  • Serve immediately, or chilled with chips, crackers or veggies for dipping.

Notes

  • Chop the Veggies Evenly. Aim for similar sized pieces for the best texture.
  • Feel Free to Adjust the Flavors. You can add more heat, more lime, or use less salt to make the salsa your own.
  • Taste Before Salting. The saltiness of different pesto brands may vary greatly so be sure to give the pesto salsa a taste before adding more.
  • Storing: Store your dip in the fridge in an airtight container for up to three days.
  • Drain the Tomatoes: After chopping your tomatoes strain off the extra juice to keep give your salsa the best texture.
