Slow Cooker Chicken Spaghetti

Ingredients

  • 1 pound chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 10.5-ounce can cream of chicken soup
  • 1 10.5-ounce can cream of mushroom soup
  • 1 cup chicken broth
  • 1 10-ounce can diced tomatoes with onions and chiles (undrained)
  • 4 oz cream cheese diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 ounces spaghetti noodles cooked and drained
  • Optional fresh parsley for garnishing

Instructions

  • Spray the inside of the slow cooker with cooking spray to prevent sticking.
  • Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika, then place them in the prepared slow cooker.
  • In a mixing bowl, whisk together the chicken broth, cream of chicken soup, cream of mushroom soup, and canned tomatoes with their juices, then pour the mixture over the chicken in the slow cooker.
  • Top the chicken and sauce with the diced cream cheese, spreading it evenly.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  • Remove the chicken from the slow cooker, shred it using two forks.
  • While the chicken is out of the slow cooker, whisk the softened cream cheese into the sauce in the slow cooker until smooth and fully incorporated.
  • Stir in the cheddar cheese, and mozzarella cheese, mixing until the cheese is melted and evenly combined then return the chicken to the pan.
  • While the cheeses are melting, cook the noodles according to package directions. Drain completely then add to the slow cooker and toss to combine.
  • Garnish with fresh parsley if desired, then serve.

Notes

  • Cook Spaghetti Al Dente: The pasta will continue to cook after it’s added to the warm sauce in the slow cooker, so cook it until it’s just al dente. Overcooking can cause the spaghetti to become too mushy.
  • Shred Your Own Cheese: Fresh is best here! Pre-shredded cheese won’t melt as well as freshly shredded cheese due to the anti-caking agents used to keep it from sticking together in the package. 
  • Use a Liner: Line your crockpot with a disposable slow cooker liner to make cleanup a breeze!
