As comforting and cozy as a bowl of oatmeal can be, everyone likes to change things up once in a while and these pancakes using oat flour are one of my favorite ways to switch things up at breakfast.

Ingredients for Pancakes with Oat Flour
My favorite thing about this recipe is that it uses ingredients I always have on hand.
- Oats: I use a food processor and grind mine fresh. Alternatively, you can use oat flour.
- Baking Powder: Helps the pancakes rise to light and fluffy goodness.
- Brown Sugar: Just like my oatmeal in a bowl, I love to add just a bit of brown sugar for sweetness.
- Salt: A pinch is all you need!
- Eggs: This helps keep the pancakes together. See alternatives below.
- Vanilla: You can skip this but I really think it takes the flavor to the next level.
- Milk: Keeps the pancakes moist and creamy.

You will also need some butter, cooking spray or oil for cooking the pancakes. This will help the batter from sticking to the cooking unit.
Substitutions
While this recipe is pretty simple, there are substitutions you can make if you have dietary restrictions.
- Brown Sugar: If you are watching your sugar levels, give this brown monk fruit sweetener a try. Alternatively, you can use white granulated sugar instead.
- Eggs: You can use an egg replacer or simple flax egg as a binder for this recipe if needed.
- Milk: You can use any kind of milk for this recipe. Try dairy, plant based or even oat milk!

Another great thing about this recipe is that you really don't need any fancy equipment to make it. All you need is:
- Food Processor (only if you are grinding your own oats)
- Mixing Bowls
- Mixing Spoons or an electric mixer
- Griddle or Frying Pan
- Spatula
Instructions
To make oat flour pancakes from scratch, start by making your oat flour. It's as easy as blending up your oats in a food processor until desired texture is reached, but if you need more details you can check out my complete guide here.
Once you have your oat flour blended, mix all the dry ingredients in a large mixing bowl. It's important to fully incorporate the baking powder throughout the flour. You can use a spoon or a whisk to do this.
Next, add the milk and eggs and mix until fully incorporated. You can use a spoon or electric mixer for this step but be careful not to over mix.
Preheat your griddle or skillet to 375 degrees or medium heat.
Apply cooking spray, butter or oil to the griddle or pan and use a measuring cup to pour about ¼ cup circles onto the cooking unit.
If you are using a griddle, you will be able to make several at a time. In a frying pan, you may have to cook in rounds. Either way, it is important to make sure there is adequate cooking space in between the circles.
Cook the pancake for about 2-3 minutes or until bubbles in the batter pop and don't fill back in.
Flip the pancakes and cook on the other side for 2 more minutes.
You can adjust cooking times to your preferred level of doneness.
Variations
There is nothing like classic oatmeal pancakes with butter and syrup. But if you are looking to change things up, try these add-ins!
- Berries - just like oatmeal, these fluffy pancakes are great with blueberries, strawberries and blackberries
- Banana - once in a while, I love adding smashed banana to my batter for a kiss of extra sweetness
- Chocolate Chips - literally tastes like an oatmeal chocolate chip cookie
- Peanut Butter- a MUST try with the banana or the chocolate chips!
Storage
I love to make a big batch of this oat flour pancake recipe in advance for easy breakfast on busy mornings.
Once the pancakes are cooked, you refrigerate them for up to a week or freeze them for 1 month.
To reheat, simply warm them in the toaster or microwave.

Ingredients
- 2 cups rolled oats processed into oat flour (or oat flour)
- 2 teaspoons baking powder
- 1 Tablespoon brown sugar
- ¼ teaspoon salt
- 1 cup milk
- 2 eggs lightly beaten
- ½ teaspoon vanilla
- Cooking spray butter or oil for cooking pancakes
Instructions
- In a large bowl, combine the oat flour, baking powder, brown sugar and salt. Mix until fully incorporated.
- Add the milk, eggs and vanilla and stir until completely combined.
- Preheat a griddle or skillet to medium heat (375 degrees)
- Use cooking spray, butter or oil to prepare the surface of the cooking unit.
- Spoon ¼ cup of batter onto the prepared surface.
- Cook for about 2-3 minutes or until the batter bubbles and the bubbles to not fill back in.
- Flip the pancake and cook an additional 2 minutes or until desired level of doneness is achieved.
- Serve with butter and maple syrup.
