This delightful Greek-style tomato rice recipe developed from my boredom with plain rice and sides. I simply wanted something new, fresh, and different.
I found that infusing vibrant Mediterranean flavors into rice was an easy way to make everyday meals more exciting and delicious. It makes a tasty side for slow cooker chicken legs or grilled salmon.

This Greek tomato rice recipe is made using a handful of simple pantry ingredients. Here's a look at the main ingredients you need to have:

- Long grain white rice: You can use either jasmine or basmati rice to make Greek rice. They both work well.
- Extra virgin olive oil: My favorite healthy oil for sauteing adding flavor and healthy fats at the same time.
- Aromatics: Sauteed yellow onion and garlic sauteed at the start of the tomato mixture enhances the flavor and gives it more complexity. Use fresh garlic for the best flavor.
- Tomato paste: Adds more concentrated tomato flavor.
- Greek seasoning: This simple seasoning blend adds a combination of Mediterranean-inspired flavors like oregano, thyme, garlic, and other herbs and spices, giving the dish a savory and aromatic profile.
- Diced tomatoes: Canned tomatoes and their juices give the rice a bit of extra liquid as well as adding little bits of tomatoes throughout the rice.
- Vegetable bouillon seasoning: You can use the paste or powder in this recipe. It adds depth of flavor and a savory taste to the rice. I highly recommend the brand, Better Than Bouillon, it has taken my cooking to the next level!
- Fresh parsley: Perfect for adding a splash of color right before serving but it also adds a zesty, fresh flavor to it as well.

Substitutions
Here are some recommendations for substitutions you can use if you are missing some ingredients and don't want to buy them.
- Vegetable bouillon seasoning: You can swap this with homemade vegetable broth for flavor.
- Canned tomatoes: Swap the canned for fresh tomatoes. I suggest peeling and dicing the tomatoes up before adding them to the recipe.
- Greek seasoning: If you don't have this specific blend and don't want to buy it you can use Italian seasoning in a pinch.
- Olive oil: Use another cooking oil of your choice such as vegetable oil or canola oil to cook the onions and garlic.
- Parsley: You can also garnish with other fresh herbs like cilantro, chives or mint for added freshness.
Variations
Looking to change things up a bit? Here are some ideas if you're looking to make it a bit differently.
- Whole Grain: Swap the white rice for brown rice instead. I highly recommend a long-grain style of brown rice which will cook up fluffier.
- Low Sodium: Leave out the bouillon and use low-sodium broth instead. Also, use low-sodium canned tomato products as well.
How to Make Tomato Rice
Gather all your ingredients and let's get started making some Greek tomato rice aka Ntomatorizo!
First, get your rice started cooking, and then while it's cooking you can make the tomato mixture.
- Cook the onion until tender and translucent in an extra-large frying pan over medium heat. Add the garlic and cook for another minute.
- Add the tomato paste and bouillon to the skillet.


- Stir everything together and cook for three more minutes.
- Lower the heat to low and add the cooked rice, canned tomatoes and juice, and the Italian seasoning to the skillet.


- Cook the rice until it's heated through and the juice is absorbed. Transfer to a serving bowl and serve topped with fresh parsley.

Storage Tips
Store leftovers in an airtight container and refrigerate for up to 3-4 days. You can also freeze the dish for longer storage for up to three months. Reheat the in the microwave or on the stovetop as needed, adding a splash of water or broth to prevent it from drying out.

Yes, you can! That makes it perfect for meal prep. Store it as indicated above and then reheat using your preferred method.

- Side Dishes: Pair it with other tasty side dishes such as roasted green beans and beetroot salad.

- Don't Overcook Your Rice. Cook it following the directions and remove it from the heat as soon as it's done.

Ingredients
- 8 ounces long grain jasmine or basmati rice
- 2 Tablespoons extra virgin olive oil
- 1 small yellow onion diced (about 1 cup)
- 3 cloves garlic minced
- 2 Tablespoons tomato paste
- 3 teaspoons greek seasoning blend
- 1 can diced tomatoes with juice 14.5 ounce can
- 1 teaspoon vegetable bouillon seasoning paste or powder
- Optional fresh parsley
Instructions
- Prepare rice according to package directions and set aside.
- Meanwhile, heat oil in an extra large frying pan over medium heat.
- Saute the onion for 3 minutes or until tender and translucent. Add the garlic and cook for one additional minute.
- Add the tomato paste and bouillon and cook for 3 minutes. Stir until well combined.
- Lower the heat to low and add the cooked rice, canned tomatoes and juice and the Greek seasoning.
- Cook for 3 additional minutes or until heated through and juice is absorbed.
- Transfer to serving bowl and serve topped with fresh parsley.
